OPEN-FACED EGG BURRITO

I know I titled this recipe "Open-Faced Egg Burrito" but honestly it should be titled:

"How to trick people into thinking you know how to cook better than you actually do" because honestly this recipe is so easy a 6 year old can do it. 

 

This brunch dish looks really impressive, takes less than 15 minutes to make and tastes even better than it looks.

And for me... that my friend is called a win.

 

 

 

INGREDIENTS

 

2 eggs

Olive oil

Spinach

3 cherry Tomatoes

1/2 red onion

Soft Tortilla Shell

*Sriracha Aioli- OPTIONAL

 

COOK

 

Heat olive oil in a pan

Cut cherry tomatoes in half

Dice red onion

Add S+P then Sauté tomatoes and onions on medium heat until soft and caramelized.

Take pan off heat and add spinach

Mix spinach until slightly wilted.

Scramble eggs to your liking (I personally like soft scrambled eggs)

 

ASSEMBLE

 

Warm tortilla and spread a tbsp of aioli mixture on the tortilla

Layer eggs on top of the tortialla

Add veggie mixture on top
